Product Description
Invertase, named as Saccharase, fructofuranoside fructohydrolase (EC.3.2.1.26). This product was produced by fermentation in submerged medium. Saccharase could be used as the additives, ingredients, and the biocatalyzer in the fields of food, beverage, alcohol fermentation, and pharmaceutical preparation etc.
Action Principle
Invertase can specifically hydrolyze the fructofuranoside band of the non-reducing sugar, and can catalyze sucrose hydrolysis to produce glucose and fructose.

Enzyme avtivity definition:
One Invertase Unit (SU) is the quantity of enzyme which under the conditions of the assay(is based on a 30-minute hydrolysis of a 5.4% (w/v) solution of sucrose at pH 4.5 and 50oC), will convert 1 mg of sucrose to glucose and fructose in 5 min.

Packaging and Storage
Storage: We recommend to store the product under the environment with temperature <25oC, humidity <50%, and its better the temperature within 4oC~10oC.Shelf life for two years.

Application
Invertase hydrolyzes sucrose to equal glucose and fructose for producing invert syrup. Invert syrup can inhibit sucrose crystallization and improve the sweetness, enhance the flavor and color features in food.
Dosage (Refer to Invertase 300000Su/g Powder)
Add 350g invertase into 1MT sugar syrup(70%, 50℃), it is completely hydrolyzed in 6 hours.
If focus on the cost, add 150g invertase into 1MT sugar syrup(70%, 50℃) which can be hydrolyzed in 12 hours.
