Alpha Acetolactate decarboxylase (α -Acetolactate decarboxylase) is a brown liquid high-efficiency biological preparation refined by the excellent strain Bacillus subtilis through submerged fermentation, ultrafiltration and other processes.
Functions:
It can be added in the fermentation process, which can catalyze the direct oxidative decarboxylation of α-acetolactate to form 3- hydroxy -2- butanone, eliminating the intermediate step of further degradation of diacetyl. Therefore, adding α -acetolactate decarboxylase in the fermentation process not only greatly reduced the peak value of diacetyl and its content in liquor, but also shortened the fermentation period and improved the utilization rate of equipment.
For Beer Industry: it can be added before fermentation, which can reduce the diacetyl content in beer and improve fermentation. Recommended dosage is 12-60ml/T cooling wort.
Package and Storage
5 kg/bucket. Transport and store in cool dry place and avoid direct exposure to sunlight or moisture. Stored at 0- 15℃ in original sealed package, product activity remain stable for a period of up to 12 months, if store at 4-10℃, the shelf life cab be extended.
